Begin each day by indulging in a fabulous full gourmet breakfast consisting of southwestern and traditional cuisines. We meticulously prepare our homemade breakfasts following Slow Food principles using only the freshest ingredients available. In season, we feature Colorado's finest produce, from peaches grown on Colorado's Western Slope to the sweetest cantaloupe grown in Rocky Ford. The end of August marks an annual trip for several bushels of freshly roasted green chiles, grown by local farmers east of Pueblo and are a featured ingredient in some of the inn’s signature southwestern dishes. We have created over 40 original recipes; below are some of the dishes we prepare for breakfast, served with fresh fruit and creative vegetable side dishes along with juice, coffee and tea.
